Considering that I told ninkasi two weeks ago that I'd do this, you'd think I could prepare something and take pictures of it. You'd be wrong of course. But even without visuals I'm sure you can see that these are tasty and easy recipes for hearty braised meat dishes.
Braised Pork and Potatoes Coriander
For 6
1½ pounds boneless pork
1 pound tiny new potatoes
2 tablespoons vegetable oil
½ pound small mushrooms
1 cup dry red wine
salt and freshly ground black pepper to taste
1 tablespoon ground coriander seed
fresh coriander (cilantro) leaves for garnish
Remove excess fat from meat and cut into 1-inch cubes. Scrub potatoes and cut in half, do not peel. Wash the mushrooms and remove stems.
Heat oil in heavy skillet over medium-high heat and brown the meat and potatoes. When pork and potatoes are browned, move them to one side of the pan and add mushrooms. Sauté mushrooms quickly. Combine with pork and potatoes and reduce heat.
Add the wine and season to taste with salt and pepper. Sprinkle with ground coriander. Cover and simmer over low heat about 30 minutes or until potatoes and pork are tender. Sprinkle generously with cilantro.

Pork Stew with Tomatoes and Cumin
For 6
2 tablespoons vegetable oil
2 pounds lean boneless pork, cut in 1-inch cubes
3 cups chopped tomatoes, divided in half
1 tablespoon ground cumin
2 cups water
1 onion, chopped
6 cloves garlic, chopped
1 teaspoon paprika
½ teaspoon salt
1/8 teaspoon cayenne pepper
1 tablespoon flour
1 small avocado, peeled and diced
2 tablespoons grated Parmesan cheese
Heat oil in large heavy pot over medium-high heat. Add pork and brown on all sides, about 5 minutes. Add 1½ cups tomatoes, water, cumin, onion, garlic, paprika, salt, and cayenne; mix well. Bring to a boil; reduce heat, cover and simmer until tender, about 45 minutes.
Combine flour and 2 tablespoon water in a small bowl. Stir this into pan along with remaining tomatoes. Bring to a boil; cook and stir until thickened, 2 to 3 minutes. Garnish with avocado and Parmesan cheese.
